For his summer production run, he used a higher drying temperature than last year, giving a lightly roasted fragrance and a lighter mouthfeel. Everytime we meet, we have in-depth discussion about tea processing. It seems he's fallen in love with the Qingxin cultivar. He's left the plantation he was renting in Fen Shui Lin (we have a video about it, in which he makes oriental beauty). It wasn't profitable, he was getting bored there.

Carrying on with his vision of making good oolong tea in Yunnan, he decided to hit the road and look for new plantations. Last year he found one he liked in Baoshan. We've never been that far North in search of tea, but thanks to Mr Zong, we can enjoy a taste of the area from the comfort of our tea table.

Last year in Autumn we released a ball-shaped version, it was a first try. Eventually, we prefered to have a more simple processing: classic Yunnan style, in order to fully enjoy the natural material, without any roasting or fancy tricks.

The result is really good, I think more black teas should be made out of Qingxin oolong because they come out much smoother than a typical var sinensis black. After eight years, we can get a first glimpse at the results of our storage environment. We chose to try the Tian Xiang from 2018 because it is the year we finally established our current processing technique.

Our processing technique involves a short high temperature phase, followed by a lower temperature long phase during which the leaves are kepts in a ball so as to promote steaming. This long steaming phase at low temperature allows the leaf cells to degrade more and promote sweetness (same process as what happens when stir-frying vegetables).

Some tea drinkers express concerns that such a tea will not age well, because the long cooking time and steaming would destroy all the enzymes, preventing further oxidation. They instead advocate for a short kill-green at high temperature, without steaming, this preserve more of the enzymes and as a result lead to a faster oxidation over the years. This is usually at the expense of having a strong 'fresh vegetable' taste and less sweetness in the early years.

Does our processing method prevent aging? You can try for yourself with this limited release.
